Hi Jillian,

To be honest, I normally do include all of the amounts but had left them off this time for effect. Why? This really is one of those recipes that you can just "eyeball" and flex to go with what you have. For the average batch though, you'll need just one bag of split peas, a quart or so of veggie stock plus extra water to get your desired thickness of soup, a handfull of carrots and one -two onions depending on how big they are. If you only have three carrots say, you can still do it. It's really that kind of recipe. You can flex it to feed a crowd and use more bags of split peas and water in a larger stock pot, or scale it down for 4-6 and freeze the extras if you are single. Glad you're interested in trying it. It's one of our favorites and truly one of the most inexpensive recipes we use.

Hello. I really want to make this, especially since it uses a slow cooker, but you don't have the amounts of things like split peas and veggie broth that you need. Would you mind posting all the amounts of all the ingredients? Thanks! I look forward to making this. I can taste it already.

Hi P Ryan,

I have some in my freezer right now, and haven't noticed a taste difference. I'm crossing my fingers like you that it isn't a recipe shift, because they are one of the few convenience foods we buy.

The Michael Angelo's Eggplant Cutlets have finally returned to BJ's. I really did not not like the Dominex. We had them for dinner tonight but they tasted more bland than they used to. I hope this is not the case, as they were perfect before. I almost started shopping at Sam's Club just to buy them.

Thanks, Htebazile.

Glad it was helpful for you. I agree, coconut milk is particularly flexible when it comes to plant-based eating.

i think the information in this article is spot on and extremely helpful. i have been vegan for almost 20 years (over half my life) and for most of these secret weapons, it took me years to realize their full potential. i would add to the coconut milk section that you can use it to make whipped cream (search on coconut whipped cream) and also you can make an awesome garlic sauce out of it by blending a can with 2 heads of roasted garlic - for white pizza or whatever.

I don’t know, coming up with the menu has never seemed ‘simple enough’ to me LOL. But I’ve never been much of a cook. I just got into throwing tailgating parties fairly recently and even though the first one was kind of a nightmare (the grill didn’t work, it took forever to get the TV set up, ran out of drinks etc.), I’ve been having a blast since then. I’ve upgraded everything. I got a new Weber charcoal grill with a gas starter (so much easier!), found this cool table that hooks into my trailer-hitch, got some surprisingly comfortable folding chairs, and got a new satellite dish from my employer, DISH Network aptly called: The Tailgater. It’s a tiny cooler looking box that not only gets high definition signals, but it also finds the signals on its own. So instead of spending 20 minutes trying to point the dish I can start on cooking, and believe me, I need that extra time. The tailgater has been a great conversation piece; everyone wants to know about it even though the grill actually cost more. I don’t mind, if people get distracted from the taste of my food by talking about my satellite dish, well that’s just one more bonus for me.

Those were my thoughts, too. Activities build memories and turn into traditions, which is what the holidays are supposed to be about. Glad you enjoyed the piece.

Sam's Club and Costco are the two main places I buy these. Some grocery stores carry them, but I find the price best at the bulk rate.
