If you love the flavor of Indian food, but are looking for something simple and affordable to try, then this recipe for railway potatoes is right for you.
This recipe is from the book 5 Spices, 50 Dishes -reviewed previously by me on Wise Bread. It uses basic spices and ingredients in simple everyday dishes the average home cook can pull off successfully. Now, on to the railway potatoes.
What you need:
1 ½ pounds of red potatoes, 5 tbsp canola oil, ½ tsp mustard seeds, ¼ tsp ground turmeric, 1 large yellow onion (thinly sliced), 2 tsp salt, ¼ – ½ tsp cayenne pepper.
What you do:
Slice the potatoes lengthwise into quarters. Then cut them crosswise into 1/8-inch-thick slices. Heat the oil in a pan over high heat. Add mustard seeds and cover the pan with a lid. After the seeds stop popping, add the turmeric and stir for a moment. Then add the salt, onion, potatoes and cayenne. Toss and stir occasionally until the potatoes are tender (about 10 minutes). Serve immediately or store in an airtight container to take on a picnic.
