Taymer Mason, author of the blog Vegan in the Sun, has put together a collection of vegan recipes celebrating the numerous flavors of the Caribbean.
Vegan rum-raisin ice cream, white sweet potato shepherd’s pie, chickpea curry and Caribbean yellow split pea dahl are just some of the menu ideas included in the work. The book? Caribbean Vegan.
While the recipes all appear tasty enough, I did find a fair number of them to be rather labor intensive. A few were simple, but all in all this seems more like a recipe collection I’d use for special occasions. Tasty, though. I’ll give it that. Worth picking up for those interested in tropical vegan cooking, or collectors of vegan cookbooks.
