Red Corn Relish

I discovered this recipe one year when I received a windfall of both corn and tomatoes and wanted a way to use both. It’s a lovely relish, an abundant recipe, and a very tasty condiment. A pint of red corn relish is a big hit as a hostess gift, and is great for Christmas giving as well.

Red Corn Relish
Yield: 10 pints

4 c Fresh corn
3 lg onions; chopped
1 sweet red pepper, chopped
1 green pepper, chopped
3 lg cucumbers, seeded and chopped
3 c shredded cabbage
4 lb tomatoes; peeled and chopped
2 c sugar
1 c vinegar
c salt
1 T celery seed
1 T mustard seed
1 t ground turmeric

Bring all ingredients to a boil, stirring occasionally. Reduce heat and simmer, uncovered, until vegetables are tender and relish thickens, about 40 minutes. Pack into hot jars; process in water bath 15 minutes.
