Fruit Salsa

Most fruit makes pretty darned good salsa. The recipe is basic; the fruit variable.  If, for example, you have a list of favorite fresh pineapple recipes, and if it’s not already there, add pineapple salsa!

  • 2  cups diced fruit (pineapple, peaches, apricots, blueberries, mangoes… you get the drift)
  • 2  tablespoons chopped fresh cilantro (I use a little more, cuz I love the flavor of cilantro)
  • 2  tablespoons lime juice (I use more, but this is the minimum)
  • 1  small red bell pepper, chopped (1/2 cup)
  • 1  small red or sweet onion, finely chopped (1/4 cup)
  • 1  small red chili, seeded and finely chopped (1/2 teaspoon)
  • 1 cup diced fresh or canned tomatoes (optional, but I like a little tomato flavor)
  • Salt and pepper to taste
  • Depending on the fruit, add honey or whatever sweetener you choose to cut the sour

Serve as an appetizer with corn chips or as a side with your favorite Mexican themed meal.
