One thing I appreciated about Ms. Kleinís book is the fact it isnít loaded with suggestions to use meat substitutes. The dishes are stand-alone rock stars in their own right, and celebrate flavors such as sundried tomatoes, portabella mushrooms and meaty eggplant. We are huge fans of Italian food in this house, so exploring meatless alternatives for the cuisine was something we were determined to do with caution. †Anything we incorporate into our recipe repertoire has to be outstanding or we wonít stick to it.†
