This batter-grilled version of a turkey and Swiss cheese sandwich is similar to a Monte Cristo, only without the ham. It’s from the book, Reader’s Digest Down Home Cooking, the New Healthier Way.
Make four sandwiches from firm white bread, sliced turkey, Swiss cheese slices and Dijon mustard. Melt butter in the frying pan and dip both sides of each sandwich in the following batter: 2 large eggs, 2 large egg whites, ½ cup low fat milk and ¼ tsp salt whisked together. Cook each sandwich for about 3 minutes on each side over moderately high heat until cheese has melted. Serve for a work at home lunch or a jazzier version of a dinner sandwich.
