Recipes: Zucchini Cornmeal Spoon Bread

Another recipe forward from the Breester. I think this one sounds like a great dinner side dish.

3 cups shredded zucchini, 1/2 cup chopped onion, 3 eggs, 1/2 cup melted butter or vegetable oil, 1 cup sour cream, 1/4 tsp salt, 1 cup grated cheddar cheese, 1 1/2 cup cornmeal.

Heat oven to 400 degrees. Spray 1 1/2 quart baking dish with nonstick cooking spray. Place zucchini in large strainer set over bowl and let stand for 10 minutes. Then, press or squeeze zucchini to remove excess liquid.

In a large bowl, whisk eggs until blended. Add sour cream, cheese, onion, butter and salt. Stir until combined. Stir in zucchini and cornmeal until blended and pour mixture into baking dish. Bake 25 minutes or until edges are golden brown and knife inserted in center comes out clean.
