This is basically one of those “impossible pie” recipes using good old baking mix. I’m posting the cheeseburger version, but you can basically use any combination of meat and vegetables to use up left-overs. I’ve done a previous post with links to other “impossible pie” and general baking mix recipes. This is just the one off the back of a box of store bought baking mix that I picked up while we were staying in a hotel with a kitchenette. I kept the recipes on the back because I knew I’d use them once I had a chance to make my own mix.
1 pound (I use way less, and usually dinner left-overs) ground beef, 1 cup chopped onion, 1/2 tsp salt (or other seasoning option of choice), 1 cup shredded cheddar cheese, 1/2 cup baking mix, 1 cup milk, 2 eggs.
Heat oven to 400 degrees and grease a 9 inch pie plate. Scatter meat and vegetable item on the bottom of the pie plate and sprinkle with cheese. Stir remaining ingredients until blended. Pour over meat, vegetable and cheese. Bake about 25 minutes or until knife inserted in the center comes out clean.
