David makes these quite a bit on the weekends (when we our belongings aren’t stored, that is). Our friend Donna makes up a larger batch of batter when she makes waffles and keeps it sealed in the refrigerator. That way, she only has to mix the batter once, but can have hot fresh waffles for a few days in a row . Great idea if you are having company, as well.
Mix 2 cups baking mix, 1 1/3 cup milk, 1 egg and 2 tbsp vegetable oil until well blended. Pour onto hot waffle iron and cook until steaming stops. If you want, you can make extra and reheat in the toaster for quick breakfasts through the week.
