Since I usually have a fairly large batch of homemade baking mix set aside, this is one of my regular stand-by recipes for unexpected company. Throw on a pot of coffee and set out a selection of tea bags to round out the treat.
For the cake part you’ll need 2 cups baking mix, 2/3 cup milk or water, 2 tbsp sugar, and 1 egg. For the topping, mix 1/3 cup baking mix, 1/3 cup brown sugar, 1/2 tsp cinnamon, and 2 tbsp firm butter or margarine.
Heat oven to 375 degrees F. Stir coffee cake ingredients until blended and pour into a greased 9 inch round pan. Mix topping and sprinkle over batter. Bake 18-22 minutes or until golden brown.







My family loves baking mix coffee cake. We often substitute orange juice for the milk. Sometimes we add oats to the topping.
