This recipe is straight off the Quaker box cover. It’s the only one I’ve ever used. Could add other types of dried fruits and nuts as a variation. Chocolate chips are also a fun addition.
1 cup softened margarine, 1 cup firmly packed brown sugar, 1/2 cup white sugar, 2 eggs, 1 tsp vanilla, 1 1/2 cups flour, 1 tsp baking soda, 1 tsp cinnamon, 1/2 tsp salt, 3 cups oats, 1 cup raisins.
Heat oven to 350 degrees and beat together margarine and sugars until creamy. Add eggs and vanilla, beating well. Add combined flour, baking soda, cinnamon and salt. Mix well. Stir in oats and raisins and well blended. Drop by rounded spoonfuls onto an ungreased cookie sheet. Bake 10-12 minutes or until golden brown. Cool one minute on a cookie sheet. Remove to a wire rack to cool completely. Here’s a related article for those looking for more raisin recipes to try.
