Kelly, one of my former Guam teaching colleagues showed me how to do these. You can fill them with cream, custard, savory sandwich fillings, whatever you choose. They are a great way to pull off lots of elegance for minimal cost.
1/2 cup margarine, 1 cup flour, 4 eggs, 1/8 tsp salt, 1 cup water. In a saucepan, combine margarine, water and salt. Heat to boil. Add flour all at once, stirring vigorously with a wooden spoon. Cook and stir until mixture becomes a ball that doesn’t separate. Remove from heat and cool for 10 minutes. Add eggs one at a time, beating with wooden spoon after each one until smooth. Drop batter by heaping tablespoonfuls onto greased baking sheet. Bake at 400 degrees for 30-35 minutes or until golden brown. Spoon out middles and fill as desired.
Kelly always swore by the use of a wooden spoon rather than a metal one. Not sure why, but I’ve never deviated because these things can traditionally be so fickle in the oven. Hers always came out fine.
