Recipe: Vegetable Casserole

A quick and easy veggie side.

This recipe calls for 2 cans of condensed soup. I use the homemade equivalent from my bulk cream soup mix recipe and add the ingredients to get the two kinds they want. But if you want the extra speed in preparation and don’t mind the extra salt and cost, go for it.

1 can cheddar cheese soup, 1 can cream of celery soup (mix both together with half a can of water), salt free seasoning blend, slightly precooked vegetable blend of carrots, broccoli and cauliflower (I just microwave the frozen mixed bag), a few handfuls of crushed crackers.

Put the vegetable mix into a casserole dish, spooning the soup mixture over the top with a little of the seasoning blend. Cover with the crushed crackers for a topping and bake at 350 degrees for about 40 minutes. Not the fanciest ingredient list, but  it’s good cheap food and people usually love it.
