This is one from Taste of Home magazine that makes a nice gooey concoction you have to scoop out. I also like the fact that it has a very affordable ingredients list.
1 cup flour, 3/4 cup sugar, 6 tbsp cocoa (divided), 2 tsp baking powder, 1/4 tsp salt, 1/2 cup milk, 2 tbsp vegetable oil, 1 tsp vanilla, 1 cup packed brown sugar, 1 3/4 cups hot water.
In a medium bowl, combine flour, sugar, 2 tbsp cocoa, baking powder and salt. Stir in the milk, oil and vanilla until smooth. Spread in an ungreased 9 inch square pan. Combine brown sugar and remaining cocoa. Sprinkle this mixture over the batter. Pour hot water over all and do not stir. Bake at 350 degrees for 35-40 minutes. Serve warm topped with whipped topping or ice cream.
