The classic cheese ball appetizer takes on a new complexion in this oh-so-yummy recipe.
1 8 ounce pkg of cream cheese (softened), 1 8 1/2 ounce can crushed pineapple (drained), 2 cups (8 ounces) shredded mild cheddar cheese, 1/2 cup chopped pecans, 1/4 cup chopped dried apricots, 1 tsp chopped crystallized ginger, flaked coconut.
Combine cream cheese and pineapple, mixing until well blended. Add remaining ingredients except coconut. Mix well. Chill several hours and shape into a ball. Roll in coconut. Chill until ready to serve with crackers.
