This one is relatively affordable to prepare and makes a good sized batch.
2 pkg softened cream cheese, 1 can pink salmon (take out bones and extra skin), 3/4 of a large onion (chopped), garlic and other seasonings to taste, 1/2 bunch of chopped fresh parsley leaves, 1/2 cup chopped toasted almonds.
Mix together cream cheese, salmon, onions and seasonings. Spread evenly onto bottom of a pie plate or other serving dish. Sprinkling chopped parsley and toasted pecans over the top. Cover with plastic wrap and chill in the fridge for 1 1/2 or more hours. Serve with crackers and let guests scoop away.
Note: If you serve this in a pie plate, you will have a thicker appetizer. For a party or other type of gathering, I used to spread the mixture a bit more thinly onto one of those large plastic party platters and then top with the parsley and pecans. It was still enough to scoop with the rectangular Sky Flakes tin crackers ( a staple for the expat) and could serve a big crowd this way. I was always able to find these ingredients as an expat and made this dish for many parties, always to rave reviews. Yummy and affordable!
