Recipe: Spinach Feta Quiche

Even people that don’t like spinach or quiche usually enjoy this one. The only expensive ingredient is the feta cheese, and you don’t need very much.

1 single crust for a 9-inch pie, 1 package (10 ounces) frozen chopped spinach, 6 ounces of crumbled feta, 1/2 cottage cheese, 6 sliced green onions (tops included), 1 tbsp olive oil, 1 tsp dry basil, 1/2 tsp pepper, 1/4 tsp garlic salt, 4 eggs, 1/2 cup milk.

Squeeze out as much liquid as you can from the spinach and set it aside. In a blender, mix feta, cottage cheese, onions, oil, basil, pepper and garlic salt. Add eggs and milk, blending well. Then add the spinach and give it a whirl to mix it up. Pour into the pastry shell.

Bake in a 400 degree oven for 20 minutes. Reduce temperature to 350 degrees and bake for 15 to 20 more minutes or until a knife inserted in the center comes out clean. Let stand and bring to room temperature before serving in wedges. You could also do this without the pastry shell to save calories.
