Recipe: Salmon Potato Scallop

I believe I found this one at the Miserly Moms web site. I really need to buy this woman’s cookbook. Every recipe of hers I’ve ever seen was perfect for those on a major budget.

Seven potatoes (peeled and sliced), 1 onion (chopped), 2 tbsp butter or margarine, 2 tbsp flour, 2 cups milk, 1 can salmon, 3/4 cup shredded cheddar, salt and pepper to taste.

Melt butter in a skillet and cook onion until tender. Add flour and whisk in milk. Boil for one minute, stirring the whole time. Turn down the heat to low, and add cheese to melt. Add the drained salmon. Arrange half the sliced potatoes in a casserole dish. Top with part of the salmon and au gratin mixture. Repeat. Bake at 350 degrees for about 30 minutes or until bubbly. Serve with a side vegetable. Very affordable and nutritious to boot!
