This one is from my mother. It’s very similar to some of the other custard blender pie recipes I’ve seen. I asked her to send it to me, as I’m trying to collect as many of these different recipes as I can find. Most women LOVE these, as they are such a time saver.
2 cups of milk, 4 eggs, 1/2 cup flour, 1 cup coconut, 1 cup sugar, 1 stick of butter, 1/2 tsp salt, 1 tsp of vanilla.
Place all ingredients in a blender. Turn on to medium speed and count to ten. Pour into a 9 inch, deep dish pie plate and bake at 350 degrees for 45 minutes. During the baking process, the flour drops to form the crust and the other ingredients form the filling. For those who love coconut custard, this is the pie for you.
