Recipe: Cabbage and Barley Soup

This one definitely gets my “el cheapo” award for frugality. I really like this idea because it uses ingredients that keep well for some time, and they are ones David and I routinely keep on hand. We are also always on the lookout for cabbage recipes. The woman who posted it on the discussion board where I found it said it came from the Miserly Moms cookbook. Here it is:
One medium onion and a 1/2 head of cabbage (both coarsely chopped), 1/2 cup barley, 3 cubes of beef bouillon, 1/2 cup of catsup and 3/4 cups of water. Bring to a boil and simmer for about 30 minutes.
Personally, I would add a bit more seasoning and perhaps some leftover chopped chicken. Otherwise, it sounds like a hit! Pair it with something from this list of gourmet sandwich ideas, and try including one of these stylish ideas for soup garnishes.
