When needing to function under extreme budget conditions, we rarely serve a full piece of meat as a menu item at meal time.
That includes reduced-for-quick-sale chicken legs. Stretching meats to get the most our of your grocery dollar is a sure fire way to see great savings at the end of the month. Some ideas to go the extra mile?
Meat and veggie kabobs, stir fry, quesadillas, lo mein, fried rice, fajitas, omelets, spaghetti sauce, soups / stews / chowders, casseroles, bean and meat burritos, chili, mixing meats with hard boiled eggs for sandwich filling, calzones, and pizza, to name just a few.
Sometimes however, your family just wants something packed with animal protein . . . period. Here are a few meat-focused menus you can pull off without breaking the bank: sloppy Joes, roast or barbecue chicken, tacos, on sale crock-pot roasts, open faced meat and gravy sandwiches on toast, roast turkey, homemade sale item meatballs.
I’ll try to post more ideas as I run across them.
