Recipes: Cream Cheese and Lemonade Pie

Another great one from the recipe collection of our friends in Jordan. I need to do recipe raids more often. I’m having tons of luck!

1 can (5 ounces) evaporated milk, 1 package (3.4 ounces) of instant lemon pudding mix, 2 packages (8 ounces each) of softened cream cheese, 3/4 cup lemonade concentrate, 1 graham cracker crust.

In a mixing bowl, combine milk and pudding mix, beating on low speed for 2 minutes. In another bowl, beat cream cheese until light and fluffy, then gradually beat in lemonade concentrate. Combine slowly with pudding mixture, then pour into crust, cover and chill for at least 4 hours. (I would think this recipe would be easily modified for low-cal by using reduced fat cream cheese and sugar free instant pudding mix.)
