Recipe: Cornmeal Waffles

From Quick Cooking Magazine, this is a nice batter alternative to the traditional.

3/4 cup all-purpose flour, 3/4 cup cornmeal, 1 tbsp baking powder, 1 tbsp sugar, 1 tsp salt, 2 eggs (separated), 1 cup milk, 3 tbsp butter or margarine (melted), 1/2 cup shredded cheddar cheese.

In a mixing bowl, combine the first five ingredients. In another bowl, beat egg yolks. Add milk and butter and stir into dry ingredients until just moistened. Stir in cheese. In a small mixing bowl, beat egg whites until stiff peaks form. Fold into batter. Bake 12 waffles in a preheated waffle iron according to manufacturer’s directions until golden brown.
