Recipe: Sunflower Nut Muffins

Another biscuit mix recipe I ran across during our house sit was sunflower nut muffins. These sound like they would be great for dinner, or with homemade soup for lunch.

2 cups baking mix, 1/2 cup mayonnaise or salad dressing, 1/4 cup grated Parmesan cheese, 1/4 cup roasted salted sunflower kernels. 1/4 cup milk, 2 tbsp sugar, 2 tbsp snipped chives or green onion tops, 2 eggs, 2 extra tbsp roasted salted sunflower seed kernels.

Heat oven to 400 degrees F. Grease the bottoms of 12 muffin cups. Mix all ingredients except the two extra tbsp of sunflower kernels. Beat vigorously for 30 seconds and fill muffin cups about 2/3 full with batter. Sprinkle each muffin with about a 1/2 tsp of sunflower kernels.  Bake until golden brown, or about 15-18 minutes.

These muffins are, quite simply, cheap food made fun. Whip some up for a meal side or after school snack.
