Recipe: Spinach – Cheese Bread

Hi Everyone!

We are house sitting in Jordan, and I noticed the owner had a biscuit mix recipe book. I am always on the look out for new ways to use this, as I make my own in bulk.  Here’s the recipe. If any of you have tried it yet, please let me know. I am posting it here for my own reference, and will try it when we return to the states.

3 cups baking mix, 1/4 cup vegetable oil, 1 tbsp caraway seed, 3 eggs, 1 can cheddar cheese condensed soup (I will probably use my own homemade version to save the extra pennies.), 1 package (10 ounces) frozen chopped spinach – thawed and squeezed dry.

Heat oven to 350 degrees F. Grease  a 9 x 5 x 3 loaf pan. Mix all ingredients except spinach until well blended. Beat 1 minute, then stir in spinach until well blended. Pour into pan.  Bake until wooden pick inserted in center comes out clean, or about 55 – 65 minutes. Remove from the pan.
